Recipe for “Fasnachts-Küechli”

This delicious type of delicate, crispy pastry is usually eaten during Carnival.


3 1/4 cups flour

3 Eggs

3 tablespoons butter (melted)

1/4 cup cream

Powdered sugar for dusting

Vegetable oil for frying

Mix together the eggs, sugar, butter and cream. Put the flour in a second bowl and make a hole in the center; add the egg mixture. Stir until all ingredients are well incorporated. Cover the dough with plastic wrap and let rest for one hour in the fridge. Role the dough into a log one inch in diameter and cut into three equal pieces. Using a rolling pin role out each piece very thinly - about 1/8 inch. Carefully and one-by-one put them into the oil (preheated to 325-350 farenheit). Fry until golden-brown and remove; set them on paper towels to absorb excess oil and allow to cool. Dust the Küechli with powdered sugar and enjoy!
